Gluten-Free Appetizers: Recipes by Beach Plum Chef

Notes from Dana: I purposely chose ingredients and made recipes that I believe hold appeal for all of the guests – not just the wheat- intolerant amongst us. 🙂

Passed Appetizers, Gluten-Free:

Whole Artichoke Heart, Mozzarella & Grape Tomato w Homemade Crouton Skewer – roasted with lemon, basil, & olive oil – served warm / gluten-free bread cube toasted w olive oil & dried spices

Egg Frittata Squares – sautéed potato w finely chopped vegetables & spices – baked into a flat, thin frittata and cut into squares

Coconut Chicken  –  Bell and Evans breast and thigh meat, dipped in unsweetened toasted coconut, served on mini skewers with cooked green onion

Sweet Potato and Green Onion Skewers – roasted sweet potato with fresh lemon juice and sesame seeds w cooked green onion

Mixed Grilled Vegetable Skewers – lightly brushed w a fresh cucumber-basil sauce just before serving

Vegetarian Stuffed Mushrooms – mini Portobello mushrooms w sautéed onion, parsley, toasted sunflower seeds, raisins, cooked mushroom stem & gluten-free bread crumbs.

Marinated Sirloin Steak on Garlic Crostini (house-made gluten-free crostini w fresh garlic) –  sirloin slices, horseradish dill sauce and micro-sprouts

Beef Tenderloin on Herb & Garlic Crostini (gluten-free house-made crostini) – grass-fed beef tenderloin w horseradish dill sauce and microsprouts

Scallops Riding Heirloom Tomatoes – Sea Scallops dipped in gluten-free bread crumbs – pan sautéed w onion, white wine and parsley – served on skewers w heirloom tomato

Roasted Potato Fingers w Garlic Toast and Sautéed Greens Stuffing – Sweet fingerling potatoes split in half and roasted w garlic – toasted gluten-free bread crumb, sautéed greens and organic neufachatel cream cheese

Dips and Plattered Appetizers, Gluten-Free:

Freshly Made Garlic Humus Platter w Crudités – chick pea cooked with boiled onions and herbs – pureed with olive oil, lemon, & a mix of fresh and roasted garlic

Served w gluten-free grain crackers and garlic crostini. Crudités:  organic carrot, fresh radish, organic grape tomato, and cucumber spears

Artichoke, White Bean and Herb Dip – artichoke hearts and white beans pureed w roasted garlic, lemon juice, mustard, and fresh parsley and sea salt – pureed to a fine texture

Chick Peas, Sweet Green Pea & Dill Dip – Chick peas pureed w fresh dill and caramelized onion, sweet green peas, and spices
