Indian Spiced Vegetables w stewed chickpeas, eggplant coriander, carrot w ginger, lemon and cinnamon, & sweet potato (vegan)
Vegetable Burrito in whole-wheat wrap w/ sautéed zucchini, red bell pepper, red onion, tomato, & cilantro & aged cheddar. Served w homemade guacamole, stewed black beans w green onion, and fresh tomato salsa (can be made w vegan cheese.)
Fingerling Potatoes w garlic and caramelized green onion, served with Poached Eggs and Sautéed Spinach w sesame oil and Bragg’s Aminos*. 
Vegetable Pie – a light layer of blue cheese, mixed bell pepper sautéed w onion, garlic and spices – topped with a layer of organic spinach cooked with leek, and red bell pepper flakes and fresh parsley – beach plum chef special recipe
Beans, Rice and Greens – stewed red beans w garlic and caramelized onion, brown basmati rice cooked w fresh basil and carrot, sautéed or steamed broccoli rabe w a touch of red pepper flake, & Swiss chard. (vegan)
Adult Macaroni and Cheese – homemade béchamel mixed into elbow macaroni w caramelized onion and homemade breadcrumbs – baked. (can be made vegan)
Creamy Organic Polenta & Eggs – organic corn grits in light tomato broth w poached egg and sautéed greens 
Italian Spinach Pie w ricotta, feta, raisins and toasted pine nuts – in a whole wheat pizza style crust (closed top)
Served w shredded carrot salad w lemon juice and sea salt, and micro-sprouts
Roasted Vegetable Platter – potato, onion, asparagus, broccoli, cauliflower and carrot served w Tahini Goddess Sauce (sauce inspired by Omega Institute (vegan) 
Stuffed Zucchini w Lemon Couscous and Carrot Salad (vegan) 
Borscht & Potato Pastries – beet soup served w sour cream, and potato pastries in pate brisee w celery & caraway 
Vegetable Soup w Cheese Toasts and Roasted Asparagus Spears Side Vegetable (can be made vegan)
Goat Cheese Quenelles in Fresh Tomato Broth – small oval shaped spoonfuls of goat cheese w fresh herbs w fennel. Served w greens salad and toasty sourdough bread w garlic butter. 
Stuffed Portobello Mushrooms – roasted portobello mushroom layered with sautéed herbs, homemade bread crumb, raisins, greens and feta cheese – Served w greens salad and herb vinaigrette
Vegan Stuffed Mushrooms – portobello mushroom w sautéed greens, toasted sunflower seed ground, tomato, caramelized onion, fresh herbs (vegan)
Stuffed Roasted Carnival Squash w Toasted Sunflower Seeds Topping (vegan) 
Whole Wheat Pizza w Fresh Tomato Sauce, Basil and Fresh Mozzarella
Served w greens salad w cucumber, shredded carrot, red onion and fresh herb vinaigrette (can be made w vegan cheese)
Mushroom Broth w Leek and Cheese Dumplings – A mix of domestic and wild mushrooms in a flavorful homemade mushroom broth w savory leek and cheese dumplings.  Dumpling are served on a side plate.

Vegetarian Chili – a red bean/ black bean combo with tomato, carrot, celery, parsley and sweet potato, sprinkled w green onion and cheese. Served w homemade cornbread. 

Ginger Soup w Udon Noodles, Vegetables and Thai Basil (vegan)

Classic Silky Tofu w Garlic Ginger Sauce, served w sautéed burdock root, & fresh spinach w caramelized red onion & garlic (vegan)

Note: The American Heart Association is now advising heart patients to follow vegan standards – for a diet low in saturated fats, high in vegetable and grain fiber (artery cleansing) and vitamins and minerals (artery strengthening).

I note that it depends upon how you cook things – as vegan foods can also be fried, and we need to select our cooking oils for optimal nutritional value. 🙂 – Chef Dana

**Bragg’s Liquid Aminos product is made from soy and purified water, and is similar to soy sauce, but less salty & with amino acids and unlike soy sauce is not fermented / because of the amino acid profile it is considered a health booster (vs regular soy sauce)
